Tuna Route
The Zahara Tuna Route pays homage to the ancient art of almadraba fishing, a traditional fishing technique inherited from the Phoenicians and Romans. In spring, the area's best restaurants offer original tapas and dishes made with wild bluefin tuna.
At the 2019 Tuna Route, the El Cortijo de Zahara restaurant took home the award for the most original tapa for its ingenious creation: "Ilusión," a fake tuna caramel that dazzled with its presentation and innovative flavor.
Retinto Route
In autumn, the Zahara Retinto Route celebrates native beef, raised free-range in the La Janda region. A festival of flavors that highlights the richness of local produce and the region's culinary creativity.
In 2019, El Cortijo de Zahara won the award for the most innovative tapa and the popular jury's prize with its original "Retinto pork cheek brownie with Pedro Ximénez" , accompanied by ice cream with chips and syrup from the stew itself.
In 2023, he stood out again with "Flor de Retinto," a wonton pasta flower filled with pork cheeks, Payoyo cheese cream, guacamole, and hints of chili, cilantro, and lime. Both awards reflect his commitment to culinary excellence and innovation.
